Sorry about my long time of absence but the new year was not too good to me. A bad cough kept me away from the kitchen and everything else for almost 2 weeks. I hope my bad luck won’t continue for the rest of the year. Maybe I didn’t won the coin in vasilopita but that doesn’t mean that everything will go wrong from now on. Does it ? I hope not. I have to wait and see. Never mind.
After so many days of exhaustion a “real food” was everything I wanted. A real food. Not soup, not light, not food for ill people anymore. I wanted a comfort food and this “oven roasted beef with vegetables” is the meaning of comfort. It was not only the urge to taste a delicious dish but the urge to be in the kitchen and cook something tasteful and appetizing.
This is a recipe I used to make with pork but I think that beef gives an extra tastiness that pork can’t give cooked this way. I used a lot of vegetables (potatoes, onions, carrots, peppers, tomatoes) which after 4 hours in the oven makes a so flavored and rich sauce that a loaf of bread seems not enough for dipping in. The last and final touch that takes this food to the next level is (what else!) cheese. Cubes of a salty and hard white cheese (I used kefalotyri amfilohias) are sprinkled all over the food about an hour before it is done. The cheese melts and with its nutty flavor gives spiciness and an extra interest to every bite of this delicious food. If you can’t find kefalotyri I think that pecorino cheese can also do the job.
The preparation is simple, not time consuming and not a messy one. You will need a baking dish with lid or a French oven so it can be cooked for a lot of hours without dry and the meat to be juicy and tender. Put all the vegetables in the baking pan, add salt, pepper, oregano and olive oil and mix to distribute. Place the meat over the vegetables and cook for about 4 hours (all the details are mentioned in the analytical recipe below). So simple and the result is unbelievable tasty!
Surely this “oven roasted beef with vegetables” isn’t an everyday food. It is most probably a Sunday food. It is easy but it is not quick. It needs time and it is worthwhile every hour. Of course good company to share it with, is a necessity! Don’t be a selfish on this one! Enjoy!!!
Oven roasted beef with vegetables
- 1,5 kg beef
- 1,5 kg potatoes
- 3 large onions
- 2 cloves of garlic
- 3 tomatoes
- 4 carrots
- 1 red bell pepper
- 1 yellow bell pepper
- 1 orange bell pepper
- 1 green bell pepper
- 1 1/3 cup olive oil
- 2 teaspoons oregano
- freshly ground pepper
- 350 gr kefalotyri cheese, cut into cubes
Wash all the vegetables very well.
Cut the beef into pieces about 7cm.
Put the pieces of the meat into a large bowl and season with salt, pepper and oregano.
Add 1/3 cup of the olive oil and mix well with your hands.
Set it aside until you prepare the rest of the ingredients.
Peel the potatoes and cut them into wedges.
Peel the carrots and cut them into slices.
Remove the seeds and stems from the peppers and cut them into strips.
Remove the skin from the onions and cut into large pieces.
Remove the skin from the cloves of garlic and cut into four pieces each.
Cut the tomatoes into small cubes.
Put all the vegetables into a large baking dish with lid and season with salt, pepper and oregano.
Add the olive oil and mix well with your hands.
Place the beef over the vegetables and cover the baking dish with the lid.
Bake in a preheated oven at 180°C for 4 hours.
At about 3 hours remove the lid, add the cheese and continue to bake without the lid for the last hour.
You have to turn the meat pieces upside down at least two times that last hour.
Check the food every hour. A lot of juices will come out of the vegetables but better check than end up with a burned food. As I have mentioned before, every oven has its own "peculiarities".
