Olive bread is a classic Mediterranean bread, easy to make, delicious and full of flavor. The intense taste of salty olives turns this simple bread to a flavorsome and extra tasty snack.I used dry black olives in salt (known as throumpes in Greece) but you can use green or Kalamata olives as well.

Ingredients
- 500 gr bread flour, sifted
- 1 package instant dry yeast (9 gr)
- 2 teaspoons salt
- warm water (about 1 1/2 cup)
- 100 gr dry black olives in salt (throumpes)
- 2 tablespoons olive oil
Instructions
Remove pits from the olives and cut them in small pieces.
In a medium bowl mix together sifted flour, salt and yeast.
Slowly add the warm water kneading by hand until you have a nice, smooth and non sticky dough. The exact amount of water depends on the flour. I used 1 1/2 cup but you may need more or less.
Add the olives and the olive oil and knead a little more to incorporate, about 2-3 minutes.
Divide dough to 6 pieces.
Shape each to a loaf and put them on a baking sheet lined with parchment paper.
Let the loaves rise in a warm place until double in size, about an hour.
Bake in a preheated oven at 175°C for 30 minutes.
